Chili con Carne

This is a classic, flavorful chili made with beans and a touch of heat

1. On your pressure cooker, select Sauté or Browning and fully heat the cooking pot.

2. Add the olive oil, followed by the ground beef, to the cooking pot. Cook for 3 to 4 minutes, until the beef is slightly browned, breaking it up well with a wooden spoon. Drain off the fat.

3. Add the onion, red bell pepper, and jalapeños. Cook and stir for 3 minutes.

4. Add the garlic, chili powder, cumin, salt, oregano, and pepper. Stir to combine and cook for 1 minute more.

5. Stir in the tomatoes, water, black beans, kidney beans, Worcestershire Sauce, fish sauce (if using), and cocoa powder (if using).

6. Lock the lid and close the pressure value. Cook for 10 minutes on High Pressure. When the beep sounds, wait 10 minutes, then release the remaining pressure.

7. Serve as is or select Sauté and simmer for a thicker chili.

The fish sauce and cocoa powder are flavor boosters.

  • 3 tablespoons (45 ml) extra-virgin olive oil
  • 1½ pounds (680 g) ground beef
  • 1 large onion, dice
  • 1 medium red bell pepper, diced
  • 1 or 2 medium size jalapeño peppers, stemmed, seeded, and finely diced
  • 2 tablespoons (20 g) garlic, minced
  • 1 tablespoon (15 ml) chili powder
  • 1½ teaspoons ground cumin
  • 1½ teaspoons sea salt
  • 1 teaspoon dried oregano
  • ½ teaspoon freshly ground black pepper
  • 1 can (28 ounces, or 794 g) whole peeled tomatoes
  • 2 cups (480 ml) water
  • 1 can (14 ounces, or 395 g) black beans, rinsed and drained
  • 1 can (14 ounces, or 395 g) kidney beans, rinsed and drained
  • 1 tablespoon (15 ml) Worcestershire sauce
  • 1 tablespoon (15 ml) fish sauce (see TOG Tip!)
  • 2 teaspoons cocoa powder (see TOG Tip!))
