“Extra” is the highest grade for olive oil. Virgin oil may be called “extra” if it has less than 0.8% free oleic acid, and if it exhibits superior taste and aroma. Thus, the “extra” in extra virgin olive oil means “premium.”
Extra virgin olive oils are not processed or refined. Extra virgin olive oil is essentially “fresh squeezed” from the fruit of the olive tree, without alteration of the color, taste, and nutrients or vitamins. Because of the integrity of the product, and its antioxidant components, extra virgin olive oil will keep longer than all other vegetable oils.

Extra Virgin Olive Oil

Refined olive oil is made from refining virgin olive oils that have a high acidity level to eliminate defects. It is generally tasteless, colorless, and has no odor.

As with all Colavita Extra Virgin olive oils, The organic is first cold pressed within twenty four hours of the harvest in a natural process that does not rely on thermal or chemical refinement. The result is the premium, unprocessed oil of the finest olives. Colavita Extra Virgin olive oil is USDA Certified 100% Organic, indicating only organically produced olives have been used in its production. During the colder months, olive oil will congeal during shipping. This is normal, natural, and will not disturb the quality of the oil.
