Why wait for Taco Tuesday when these simple, flavorful tacos can be served any night of the week? ­Pairing mild tilapia with Tangy Coleslaw (page 114) is the perfect combination for a delicious burst of flavor!

Directions:

  1. In a small bowl, whisk together the avocado oil, cumin, chili powder, onion powder, garlic powder, salt, pepper, and lime juice. Place the tilapia in a shallow dish and cover with the marinade. Cover the dish and let it ­marinate in the refrigerator for 30 minutes.
  2. Preheat the oven to 400°F. Line a baking sheet with parchment paper.
  3. Place the marinated fish on the baking sheet and bake for 10 minutes, or until the tilapia reaches an internal temperature of 145°F.
  4. Remove from the oven and, using two forks, break the tilapia into flakes.
  5. To serve, put the desired amount of the tilapia mixture (about 2 ounces or ¼ cup) on a lettuce leaf, top with 2 tablespoons Tangy Coleslaw, wrap, and enjoy!

Substitution Tip: If avoiding nightshades, omit the chili powder and increase the amount of cumin to 1 teaspoon.

  • 6 romaine lettuce leaves, for serving
  • 1 tablespoon avocado oil

  • ½ teaspoon onion powder, ½ teaspoon garlic powder
  • 1 teaspoon kosher salt, ¼ teaspoon freshly ground black pepper
  • ¼ cup freshly squeezed lime juice
