Sample Recipe: Curry Roasted Cauliflower

Serves 6 / Prep time: 5 minutes / Cook time: 30 minutes

Don’t lump cauliflower in the group of “white foods” to avoid because it’s not the same as white bread, white rice, and white sugar, which tend to raise blood sugar. As a member of the anti-inflammatory cabbage family, cauliflower is a nutritional boss.

1. Position the oven rack 8 inches from the top. Preheat the oven to 425°F. Line a large baking sheet with parchment paper.

2. Whisk the garlic, lemon juice, olive oil, curry powder, cumin, salt, and pepper together in a large bowl. Add the cauliflower and onion and mix to coat.

3. Arrange cauliflower and onion on the baking sheet in a single layer.

4. Roast for 10 to 15 minutes; then flip cauliflower and onion slices and roast another 10 to 15 minutes, or until browned. Serve immediately.

SUBSTITUTION TIP: For a sweet and savory flavor, substitute cinnamon for cumin.

  • 4 garlic cloves, sliced
  • 2 tablespoons lemon juice
  • ⅓ cup olive oil
  • 1½ teaspoons yellow curry powder
  • 1 teaspoon ground cumin
  • ½ teaspoon salt, ¼ teaspoon freshly ground pepper
  • 1 large cauliflower head, cut into large florets
  • ½ white or yellow onion, sliced thick
