Golden Oatmeal with Currants and Pears

SERVES 1

Thanks to a mere half teaspoon of turmeric, the oats turn a deep yellow while they cook, making this hearty oatmeal truly look—and feel—like a bowl of golden sunshine on a cold morning. I like using currants in this recipe because their tiny size makes for better distribution throughout the oatmeal, and I appreciate seasonal pears because they’re so soft and sweet. You can also substitute other fruits as you like, such as raisins and apples. Although this recipe makes a single serving, it’s easy to multiply; just be sure to increase the size of the pot you cook with to prevent any spillover from the bubbling oats.

Directions

1. Combine 1 cup water, turmeric, ginger, ground black pepper, and a pinch of sea salt in a small saucepan. Cover, and bring the mixture to a boil. Stir in the oats, cover the pan, and reduce the heat to medium-low. Cook the oats, without stirring them, for 5 minutes, or until they are tender.

2. Remove the pan from the heat and fold in the diced pear, currants, and coconut sugar. Transfer the oatmeal to a bowl and pour as much almond milk as desired on top. Sprinkle the oatmeal with walnuts and serve it warm.

Brain Boost: Sprinkle 1 tablespoon of cacao nibs over the bowl as a topping.

Ingredients

  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon finely ground black pepper
  • 3/4 cup rolled oats
  • 1/2 very soft and ripe pear, cut into 1/2-inch dice
  • 2 tablespoons dried currants
  • 2 teaspoons coconut sugar
  • Unsweetened vanilla almond milk and chopped raw walnuts, for serving
