New England is a special place.

Nowhere else in the country can you witness the seasons unfold in such spectacular fashion. Spring transforms the barren land into a verdant paradise, marking the transition with a flurry of apple and cherry blossoms, petals falling like pink and white confetti. Summer’s sun-drenched fields and dappled orchards are flush with berries and stone fruits by July. Autumn’s festive apple-picking and pumpkin-carving culminates in a dazzling finale of fiery orange, deep crimson, and burnished gold before the trees shed their festive frocks. And winter’s sugar-dusted hills and sparkling ice sculptures glazed in the wake of the latest nor’easter have a stark beauty all their own. The ever-changing New England landscape is a feast for the senses.

Each season has its own flavor.

One of the best ways to embrace these seasonal changes is through the local food, and desserts are my sweet spot. Spring rains coax up tart rhubarb for pies and crisps. It’s not officially summer in New England until shortcake is soaked with juicy strawberries and cream. Soon black raspberries, blueberries, cherries, peaches, and plums make an appearance, begging for their own crisp toppings, buttery crusts, and melting pools of vanilla ice cream. With the arrival of fall come bushels of apples, pears, and pumpkins with a smattering of cranberries and a heady dose of mulling spices to help ease the transition to shorter days and cooler nights. And winter is all about deep, comforting flavors like butterscotch, caramel, chocolate, nuts, and dried fruits.

New England Desserts celebrates my beloved New England…

…and all the sweetness it has to offer, from the rocky fields and alpine mountains of Maine, Vermont, and New Hampshire, to the fertile river plains and coastal communities of Connecticut, Massachusetts, and Rhode Island. My hope is that you’ll turn to this book again and again for the freshest seasonal desserts New England has to offer year-round. But, in truth, you don’t need to live in New England to appreciate its seasonal flavors. It’s the spirit and beauty of the region I’m trying to capture here. You can make these recipes pretty much anywhere, and most ingredients are easy to find. This book contains a mix of easy weekday recipes as well as more adventurous weekend projects and holiday-worthy desserts. Best of all, this cookbook offers recipes for every skill level, from beginner to expert, so anyone can enjoy the sweet rewards any time of year

Recipes for Every Season

Spring — Boston Cream Pie

As New Englanders know, Boston Cream Pie is not a pie at all, but rather a sponge cake split across the equator, filled with vanilla custard, and topped with a chocolate glaze. The cake and custard are best made a day ahead to allow for proper chilling. After that, the assembly comes together quickly!

Summer — Plum Cardamom Crisp

Save your soft, ripe, super-juicy plums for eating out of hand. This recipe is for firmer, slightly underripe plums. These will retain some texture after cooking instead of turning into soup. The color of the finished dessert will depend on the plum. For example, yellow-fleshed plums cooked in their purple skins will turn a gorgeous shade of vermillion.

Fall — Caramel Apple Tarts

Just when you thought apple pie couldn’t get any better, someone drizzled caramel over the top. The bitter, sweet, and salty flavors of the caramel work wonderfully alongside tart apples. These rustic individual tarts are so pretty, they could easily be served at any of the various holiday gatherings throughout the fall and winter.

Winter — Needhams (Maine Potato Candy)

While candy made from potatoes might not seem especially appetizing, I can assure you, after winning over my very skeptical husband and one very snarky teenaged son, these are amazing. They’re basically Mounds bars, but better. Here, one potato (mashed) serves to bind together the sweetened, shredded coconut filling before it’s enrobed in chocolate. You won’t even notice the potato is there, I promise.
