Sample recipe: Arugula and Fennel Salad

Pomegranates pack a high dose of beneficial, health-promoting antioxidants. If you can’t find pomegranates, you can use dried cranberries.

1. Heat 1 tablespoon olive oil in large nonstick skillet over medium heat. Season both sides of chicken with salt and 1⁄ 4 teaspoon pepper. Add chicken to the skillet. Cover and cook until just cooked through, 5–8 minutes on each side. Transfer chicken to a cutting board and let cool. Cut the chicken into bite-sized pieces.

2. Add orange pieces and pomegranate seeds to a large bowl.

3. Add arugula, fennel slices, remaining olive oil, and remaining pepper. Toss to coat and serve immediately.

Ingredients

  • 5 tablespoons olive oil, divided
  • 1 pound boneless, skinless chicken breast
  • ¾ teaspoon salt
  • ¾ teaspoon ground black pepper, divided
  • 2 large navel oranges, peeled and sliced into small pieces
  • 1 large pomegranate, seeds and surrounding flesh only
  • 4 cups arugula
  • ½ cup thinly sliced fennel
