Creamed honey is honey that has been processed to control crystallization. The process is often used in colder climates and involves heating the honey. We do not cream our honey as we do not use heat, which damages the enzymes. Only purchase manuka honey that includes the letters “MGO”, "NPA" etc along with the rating number, to be sure of their certified potency.
MGO: According to Wikipedia, Methylglyoxal (MGO)....appears to have activity against E. coli and S. aureus and may help prevent formation of biofilms formed by P. aeruginosa. Honey does not need to be stored in the fridge, even after opening!
