Sample Recipe: Chicken Legs with Rice and Peas

  1. Preheat the oven to 425°F.
  2. Place the drumsticks in a 9-by-13-inch baking dish.
  3. In a small skillet, heat the olive oil over medium heat. Add the garlic, paprika, and oregano. Cook for 1 minute, and remove from the heat.
  4. Pour the mixture over the drumsticks and turn to coat evenly. Bake for about 45 minutes, or until an instant-read thermometer reads 180°F.
  5. While the chicken bakes, cook the rice according to the package directions. When the rice has 7 minutes of cook time remaining, stir in the peas and re-cover.
  6. Divide the rice among four plates and top each with a drumstick, skin removed.
