  • ¼ teaspoon baking powder

PEANUT BUTTER AND JELLY COOKIES

Directions:

Prep time: 10mins, Cooking time: 12 mins, Serves: 6 cookies

  • Preheat oven to 350°F. Prepare a metal baking sheet with parchment paper or nonstick spray.
  • Beat the egg together with the peanut butter and sugar substitute in a large bowl until smooth and creamy. Add the almond flour, baking powder, salt, and vanilla extract. Mix well to form a dough.
  • Shape the mixture into small balls and arrange on the prepared baking sheet.
  • Make a small well in the middle of each cookie and fill with about 1 teaspoon of the preserves.
  • Bake for 10-12 minutes until the cookies are golden brown.
  • Cool on a wire rack and enjoy!
