Beef Stew

Beef Stew

Ingredients:

1 pound stew beef 2 tablespoons olive oil

1 ⁄ 2 onion, chopped 1 celery stalk, chopped

1 garlic clove, minced 1 teaspoon flour

2 cups beef stock

1 bay leaf

1 ⁄ 2 cup carrots, sliced

1 ⁄ 2 cup baby potatoes, sliced in half

Instructions:

Place half of the olive oil in a small Dutch oven and cook over medium-high heat until the oil begins to sizzle. Sprinkle salt and pepper over the stew beef and add it to the Dutch oven. Cook while turning the pieces of beef. When the beef is brown on all sides, remove and set aside. Place the remaining olive oil in the Dutch oven and then add the celery and onion. Cook until soft, then add the flour and stir until it has dissolved. Add the beef stock and bay leaf, stir to combine, and then add the browned beef, carrots, and baby potatoes. Cook for 25 minutes, stirring occasionally. When beef is tender, add additional salt and pepper, if necessary. Transfer stew to a bowl and serve.
