Sample Recipe: Roasted Vegetables with Thyme

Serves 4 / Prep time: 10 minutes / Cook time: 45 minutes

The scent of gently caramelizing vegetables roasting in the oven will likely call your family to dinner long before you are ready to put it on the table. Try to cut the various root vegetables in similar sizes, so they roast evenly, and make sure you toss them with the other ingredients thoroughly enough to coat every piece.

Instructions:

1. Preheat oven to 400°F. Line a baking sheet with foil and set aside.

2. In a large bowl, toss together all the ingredients.

3. Transfer the vegetables to the baking sheet and bake until they are tender and lightly browned, stirring occasionally, about 45 minutes.

4. Serve warm.

Shopping tip:

Don’t be put off by the strange, dirty, bulbous appearance of the celery root (celeriac), because under the skin is a potato-like vegetable with a mild, pleasant celery taste. It is available year round, but is best in the late fall and winter months.

  • 2 cups butternut squash, peeled and cut into 1-inch cubes
  • 2 carrots, peeled and cut into 1-inch chunks
  • 3 parsnips, peeled and cut into 1-inch chunks
  • 1 small celeriac root, peeled and cut into 1-inch chunks
  • 1 large sweet potato, peeled and cut into 1-inch chunks
  • 2 tablespoons olive oil
  • 2 teaspoons chopped fresh thyme
  • Freshly ground black pepper
