GUATEMALA - coming from a farm located between two looming volcanoes Fina Nueva Granada has become a perfect example of how a farm can become more than a source of delicious coffee. Finca Nueva Granada uses its own clear spring water for pulping and implements shade grown techniques to protect the environment in which is relies so heavily upon. This coffee is grown at high altitude of 1800 meters, on Arabica Bourbon plants, in the region of San Marcos. The soil here is rich volcanic resulting in delicious taste notes of dark chocolate, butter, cinnamon, toasted nuts/raisins. 1) ROASTING COFFEE to perfection is truly an art, a distinct set of skills developed over time with experience. The most basic description of the roasting process would be that the beans need to be heated to around 400*F in about 7-12 minutes and then cooled quickly.
